Midnight Snack was started by two snack-loving Canadians, Kyle and Laura Foster. Their dream was to open a store in Waterloo and offer some of the world’s tastiest and most exciting snacks. That dream became a reality in 2023 with the opening of our flagship Midnight Snack store in Uptown Waterloo.
Midnight Snack is Waterloo’s premiere destination for all your snack, candy and beverage needs. Our goal is to delight your tastebuds and expand your snack horizons. We believe everyone deserves the joy of indulgence, and it feels great to spread that joy to others!
Our product lineup is a carefully curated selection of snacks and candy from all over the world – Japan, Poland, the UK, South Korea, Mexico, Sweden – just to name a few. We carry a wide variety of both sweet and salty snacks, along with many chilled beverage selections. We offer a unique selection of bulk candies, various gift/theme boxes, and freshly spun cotton candy.
In addition to the above, we are proud to offer our own line of freeze-dried candy (and other treats). For more on the freeze-drying process, see below. We offer a range of freeze-dried candy, including all kinds of Skittles, gummies, caramels and Jolly Ranchers. Other freeze-dried items of note are ice cream, yogurt. fruits, vegetables, herbs and cheese.
Custom orders will be considered on a case-by-case basis.
First, a few terms from physics class. There are five states of matter: solids, liquids, gases, plasmas, and Bose-Einstein condensates. Let’s skip those last two because they’re outside the realm of freeze-drying. Sometimes, matter can undergo a phase change, which is when one state of matter converts into another.
Phase changes include freezing, evaporation, condensation, melting, sublimation, and deposition. Freeze drying involves sublimation, which is a process where a solid converts directly into a gas without melting. This can be observed when dry ice evaporates directly into carbon dioxide gas, a well-known example of sublimation.
Freeze drying involves first freezing the food in a low-pressure vacuum, then gradually applying low heat over a long period of time. This allows for any water in the food to sublimate directly into vapour, which then collects as ice inside the machine to be drained away after the cycle. Freeze-drying leaves behind perfectly preserved food with no remaining water content.
The result – with many candies and sweets, is that it gets BLOWN UP! Some sweets can puff up more than 10x their original size, and most become crispy or crunchy. That’s what makes freeze dried candies so unique. Not only are they lighter and airier than the originals, but they’re also more intensely flavoured!
